Pisani Dossi represents Italian caviar raised on the resurgent springs south of Milan. Since 1982, the house has combined water drawn from wells over 30 metres deep and a natural spring — filtered, never rushed — with a strictly artisanal process: each batch bottled at the moment of harvest instead of pooled in a shared master tin, which is how most caviar loses its aroma before it ever reaches a kitchen. Ökohof Gotsgarten represents Highland Cattle raised on the open pastures of Brandenburg. Since founding the farm, the family has kept herds small and grass-fed year-round, letting the animals mature slowly instead of forcing growth, a method that yields far less meat per head than conventional farming, but marbling and depth few feedlots can match. Every animal is raised on the same land it will leave, with no shortcuts taken between pasture and plate. Massimo Rivetti represents Piemonte in a glass, grown on the hills of the Langhe where Nebbiolo has been trained for generations. A family business through and through, the vineyards have passed down within the same hands, with Massimo keeping yields deliberately low and harvesting by hand — favouring long, patient ageing over speed to market, a choice that costs volume but builds structure few larger houses can match. Tartufè represents the Langhe's white truffle told through Carlotta Burdese's own hands. Founded in 2020, the brand grew from Carlotta's love of her home territory into a range spanning both fresh truffle and a full line of gourmet products built around Tuber Magnatum Pico, from truffle tagliatelle and oil to rarer finds like truffle anchovies and acacia honey. Even the name is a nod to home, "tartufo" softened into the Piemontese lilt. Every product is a way of bringing the Langhe's most prized ingredient to the table without losing its character.
